Back to basic with this Christmas logcake and reworked the recipe for the genoise sponge cake, incorporating honey and brown sugar. The result is a sponge cake that’s soft and springy, and it’s meant to last 2 – 3 days in the fridge, tasting best on the second day when the chantilly cream in the roll cake fully marries the sponge cake. Topped with whole chitose strawberries, blueberries and dried orange for a country look.

Santa Souffle 18cm:

Japanese style cheese souffle lightly baked to a golden brown top, moist and fluffy yet not lacking in cheesiness.

Silent Night 15cm: 

Caramel Dark Chocolate Mousse built on dark, rich Sachertorte and finished with a shiny chocolate glaze and cacao nibs.
