The result is a sponge cake that’s soft and springy, and it’s meant to last 2 – 3 days in the fridge, tasting best on the second day when the chantilly cream in the roll cake fully marries the sponge cake. Topped with whole chitose strawberries, blueberries and dried orange for a country look.
