Country Strawberry Logcake

Back to basic with this Christmas logcake and reworked the recipe for the genoise sponge cake, incorporating honey and brown sugar. The result is a sponge cake that’s soft and springy, and it’s meant to last 2 – 3 days in the fridge, tasting best on the second day when the chantilly cream in the roll cake fully marries the sponge cake. Topped with whole chitose strawberries, blueberries and dried orange for a country look.
